I bought a new 24 foot bow rider with a f250 Yamaha. It has generic analog gauges (Tach, speedometer, Volt meter, Tilt and fuel gauge) I have room in the dash for one Yamaha gauge. I was thinking of adding a Yamaha temp gauge but is the water pressure gauge more important. This is my first outboard as my last three boats were I\O's.

I prefer having a temperature gauge if given a choice between the two, but why not both?
Water pressure is just a means to keep the engine cool. It does no good to have great water pressure if the motor is running hot.
In the scheme of boating stuff they are not expensive. This is a do it yourself item if you are so inclined.
You can see all of the analog gauges starting on this page
