Vz200 bogs down over 4000rpm

I just bought a used 2001 triton w/200 yamaha model #60fl00372.
The boat will run all day under 4000 rpm but once you go over that
it will start to bog down or stall.the fuel/water seporator has
been replaced.still having problems

Sounds vst filterish to me. Easy job to clean it. Buy a replacement o'ring for the top of the can, save yourself the trouble of trying to reuse a swollen one. Pop out the vst filter, clean it with dish detergent, toothbrush, dry well. Might max out an hour of your time, don't be afraid, very easy.
