I'm trying to ask how to tell a 250 block from a 200 or 225.

There are a lot of different 250 engines, the block will probably have a number on it like 61A but that number would be different with each model.

the block has 61A/01

the head has 61A00

the thermostat covers have the heat sensors on them.

any idea what year the motor is?

it has carbs on it

Well it could be a 1990-2000 carb or OX66 model block.

what about the hot horns sensors in the t-stat covers?

my 91s have the in the heads.

I don't remember when they changed locations of sensor probably in mid 90's.
