Help with pump/electric motor

Our sausage turned out great as always.
60lbs of deer/pork about 1 lb links
cold smoked in our smoke house while it snowed I think. Hard to keep track of the days things happen when old and retired.
also 10 lbs of summer sausage.
have 6 lbs of Canadian Bacon( pork loin) curing now in the fridge, will hot smoke next Sunday or later in week
that biscuit looks like it would be hard to eat and very messy to eat but may taste very good

Output is about 70 AC volts unloaded. About 80 DC volts unloaded. Enough to kill me I suspect if I don't keep my fingers away from the electrics.

what is your target RPM and Voltage you are shooting for?
or is it amps you are targeting?
