If you are asking me this question,
I have not had a grill in years,
back in my younger days I did for the quick stuff for the wife and kids.

offset smokers is what I use, long and slow.

I guess I could drop some coals under the rack for meat if I cleaned out the under side of all the drippings

I had a cheap offset for awhile. Had to modify it to even out the heat.
Then I was given a green egg. So I have a little flexibility. Cook at 700 or 225.

I thought the tri tip was popular out there...

I have never done it myself and I do not remember anyone close to me telling me about doing it either.

shoulder clods, briskets, steaks, and ribs from beef
Pork butts, loins, ribs, chops , stuffed boneless loin chops
this is making me hungry

then home made sausages

I am a cheap cut of meat guy, so that may have something to do with it
