I guess if no input from sensor then the gauge just did not see the need to display it

That was Boscoe's suggestion:
"I am thinking that if a speed input is not available... then the ECON function may not be available."

The odd thing here is that the OP reports
"I originally had the ECON display prior to trying to change the units for speed and distance"

but now the dealer reports "a bad speed sensor."

If the gauge is set to display GPS speed and there is no GPS input, then no ECON functionality.

If the gauge is set to display speed through water and there is no speed through water input, then no ECON functionality.

Good that the problem is solved. I hate it when something unrelated to what I am doing fails at the same time and causes me to think that what was being done caused the problem. It sends me down rabbit holes. Damn those rabbit holes.
