Do you need to defog these engine if I put oil in the fuel filter and run it?

Better to remove spark plugs and put about an ounce of fogging oil in each cylinder, then pull landyard cord and spin engine over with starter to coat cylinders with oil.

Do you have to worry about O2 sensors failing/fouling, when fogging EFI motors?

Probably, that's why you need to pull the 02 sensor every season to clean and test. Do this AFTER you fog. May want to drain the VST also. AND that high pressure pump might not take kindly to straight oil.
